Northern Vietnam has long been influenced by its proximity to China. As the only part of the country that experiences four seasons, many dishes are only available on a seasonal basis. Overall, the food tends to be milder and lighter than that found in the rest of Vietnam.

Day 1: Arrival Ha Noi (Meal: None)
Pick up at Noi Bai Airport then transfer to Hotel. Our guide will meet you upon arrival then transfer to Hotel. Welcome cocktail. Check in and refreshing at hotel. Rest of the day is at leisure.
Day 2: Ha Noi – Mai Chau (Meals: B, L, D)
Today, you will travel to the south-west out of Hanoi to the village of Mai Chau. The journey takes about 3 hours and travels through the countryside. After checking into the lodge, enjoy lunch before an afternoon at leisure to explore the village.
Mai Chau is located in the mountainous province of Hoa Binh province, approximately 135 km north from Hanoi . Mai Chau village is in the heart of a beautiful valley that is a bright, almost parrot-green in spring and by autumn has transformed into deep golden hues as the rice approaches harvest. The village's stunning location makes it the perfect base for trekking, mountain biking, kayaking and caving. Mai Chai is home to a number of different ethnic minorities; White Thai, H'mong, Zao, Muong, Tay, Hoa and Viet and each group has their own language, literature, handicrafts, music, dancing and festivals. The Sunday market brings hill tribe people who live in the mountains into Mai Chau to sell their wares, enjoy meals together and take part in traditional dances.

Day 3: Mai Chau (Meals: B, L, D)
After breakfast, drive to Xa Linh Village which is home to people of the H'mong hill tribe and is located 1 km above the sea level. Take a 2 hour walk with a guide through the mountains past fruit orchards, wild flowers and local wildlife, lunch is at a local restaurant.
After lunch, take time to explore the area by bike, relax by the pool or walk to the nearby Thái villages of Pom Coong and Lac to browse local handicrafts.

Day 4: Mai Chau – Ha Noi (Meals: B, D)
After a leisurely breakfast, drive back to Hanoi (approx 3 hours) and check into the hotel for refreshing.Welcome cocktail. Late in the afternoon, you will be picked up and escorted for a cyclo tour to visit the old quarter of Ha Noi. Enjoy water puppet show before having dinner at local restaurant.
Day 5 : Ha Noi – Cooking class – City tour (Meals: B, L, D)
Today, you will join the first professional cooking class in Viet Nam.
08.00 Meet our guide and take a short cyclo trip through Hanoi's legendary Old Quarter.
08.20 The market tour will give you an insight not just into the scents and flavours of Vietnamese herbs and spices but also market culture - how to bargain and where to buy your goods. The market place is the core of Vietnamese society.
09.00 Transfer to Highway4 Restaurant by private car.
9.15 At Highway4 get kitted out in your chef's outfit whilst our chef talks you through today's dishes. Then our chef will lead you through each dish, giving you plenty of opportunity to get involved and try your hand at reproducing the flavours.
11.15 Dine on the dishes you have just prepared. We will also supply you with a recipe booklet containing all the information you need to reproduce an authentic taste back home.
Class ends around 12:00 AM
In the afternoon, we will visit the Ho Chi Minh museum, the One Pillar Pagoda, the stilt house from which he conducted much of the American War, and Ba Dinh Square, where he delivered the Declaration of Independence in 1945, followed by the Temple of Literature, Tran Quoc Pagoda.
Diner will be served at local restaurant.

Day 6 : Ha Noi – Ha Long (Meals: B, L, D)
After your breakfast in your Hotel, the car will pick you up and transfer you to Ha Long Bay. It takes around three and half hours drive for 170 km far. You will enjoy the beautiful scene along the road, with many rice fields (in right season). A rest stop will occur on the way for refreshing where you can have a cup of coffee.
After arriving at Ha Long, you will transfer directly to the pier for boarding. A welcome drink and cool towel is provided then you will check in for your cruise.
Seafood lunch will be served, enjoy the meals and take a look to the bay. The area has many limestone karsts and isles with a lot of sharps in various sizes and shapes will be showed. Some activities are available for your choice as swimming, kayaking.
A rowing boat will take you through a local fishing village. This floating village will surprise you as you can see the government office and even the floating Bank. If time permits, you will see how they cultivate the pearl. You may have the chance to bet with your luck by buying a cheap clam but hope for a beautiful pearl inside!

The Day starts by a morning exercise test (‘Tai chi’) on the sun-deck. Morning swimming is also available for those who prefer it but kayaking must be booked in advance so equipment is available.
You will have a healthy Breakfast while cruising. Today you will explore the marvelous natural landscapes. Climb the nearby mountain for to see the Surprising cave while admiring the amazing landscape.
Back to shore around 11: 00 AM. Lunch will be at a local restaurant in Ha Long.
Arrive Ha Noi around 4:30 AM. Check in Hotel to relax and refresh.
Dinner is at a local restaurant with a traditional music performance.
Overnight in Ha Noi.
