  • Getting to know the cruises is the great way of understand the culture of the country. Vietnamese food is healthy, simple to cook and delicious and forms a large part of the culture. The Red Bridge Restaurant & Cooking School offers a daily, half-day cooking tour that introduces visitors to Vietnamese cuisine. Suitable for all travelers, the tour is a fun and interesting way to learn about the local food. The program could be run from 2 learners. This tour gives you a hands-on lesson on how to shop and cook authentic Vietnamese food.

DETAILS
 
- We start the day (7.45am) at our meeting point - The Market Restaurant (3 Nguyen Hoang Street, An Hoi Islet, tel: 0510 2241555/2241556).
 
- Your guides will arrive with your bicycles to collect you for the start of the Countryside Bicycle Tour and Tra Que Herb Gardens. We cycle through the Ancient Town and quickly venture on to the country lanes avoiding any heavy traffic and main roads.
 
- We stop at the rice paddy fields to learn about rice and how it is grown and harvested. We then continue on past water buffalo and exotic birds to Tra Que Village. Your guide takes you on an informative walk through the herb gardens giving you lots of culture, history, cooking and herbal remedies of the many herbs grown here. You will visit the only Cao Lau noodle makers in Hoi An. This 5th generation family welcome you and are proud to show you all the steps and techniques involved in this skilled and artful process of making their noodle that supply all the local restaurants and the whole of Vietnam. We also go to the home of bean sprout growers to learn about how they grow and their cleaning techniques, we then visit a countryside market learning about local fruits and vegetables.
 
- On our return to The Market Restaurant we tour the many different Street Food counters, seeing live cooking demonstrations, learing how to make many different recipes with food tastings along the way. See bread for our banh mi or baguettes being made in front of you and then taste the baked bread fresh from the oven. Rice and water being ground to make rice water to make noodles, rice flour crepes, dumplings and rice paper dried on bamboo and grilled to eat with Hoi An chilli sauce. See our famous dish of Cao Lau, the noodles being made by hand and steamed over an open fire. We offer a choice of traditional Vietnamese teas served with home made Hoi An cup cakes made freshly in front of you. Taste sweet treats and candy that we eat at Tet our Vietnamese New Year celebrations. And much more .....
 
 - The cooking lesson runs about 2 hours - our cooking teachers first demonstrate each dish before we prepare    the same dishes ourselves. After the lesson we sit down and eat what we have cooked. Refreshing drinks and water are included with the meal. You will receive a copy of the recipes and a Vietnamese cooking utensil to take home.

2. Banh Xeo (Crispy Pancakes with pork, prawns & bean sprouts wrapped in green mustard leaves)

4. Cao Lau (Hoi An’s famous noodle dish with marinated pork, demonstration only)
